Recipe: Spicy Peanut Chicken

This is a quick and dirty, through and through cheat of a recipe, 5 minutes to prepare and around 10 to cook!  Serves 2.

(This is a #LCHF Low Carb, High Fat dish)

Ingredients

  • 2 Chicken Breasts, cut in to thick strips / lumps
  • 2 or 3 tblsp Smooth Peanut Butter (Or Crunchy if you’re evil!)
    (Always use Full Fat, the low fat is carb high!)
  • 1 or 2 tblsp Garlic purée, to taste
  • 2 tblsp Olive Oil
  • 2 tblsp Lemon Juice
  • 2 tblsp Light Soy Sauce
  • 1/2 tsp Freshly ground black pepper
  • 1/2 tsp Cayenne Pepper

Method

Melt the peanut butter in a microwave for around a minute, or it will be too hard at room temperature to mix efficiently.

Combine the other ingredients save for the chicken, with the peanut butter and mix well.

Marinade the chicken strips in the peanut butter mixture, you can do this for as short, or as long a time as you want.

Fry in a non-stick pan, turning a few times during cooking.  No need for oil, as there is plenty in the marinade.  When the chicken is cooked, and the coating has gone deep brown, you’re done!

Serve with Salad / Tomatoes / Coleslaw / Whatever takes your fancy!
